Ham is the noble piece par excellence. It comes from animals over 22 months old and 160 kilos in weight. The hams are simply added sea salt and, after a brief salting period, they go first to the dryer and then to the cellar. In total, more than 36 months of curing and maturation, during which chemical changes and the formation of aromatic compounds occur, resulting in a loss of around 35% of its fresh weight.

The characteristic features of 100% Iberian acorn-fed hams are the black hoof, a synonym of the authenticity of their genetics, and the slim cane. Among their attributes, the "flavour" (smell, taste, and texture combined), the bright lean meat, and the fluidity of the fat, which are unmistakable and make, when tasted, a series of sensory perceptions that awaken the senses, enhancing their unbeatable "bouquet."
