In the production of Cantillon Kriek Lambic BIO lambic aged for two years is blended with local organic sour cherries in 650 litre foeders. This requires 150 kg of cherries per barrel. After two to three months of infusion, it is blended with one year old lambic which aids secondary fermentation in the bottle.
