Razor clams (ensis magnus) collected from the seabed of the Cíes Islands (Pontevedra) by divers from the Cangas do Morrazo brotherhood. Once caught during the campaign, they are cooked, cleaned, and sorted by size. They are then hand-packed one by one and preserved in olive oil.
