Tasting notes: Golden color, bright and penetrating, showing a small, fine, and integrated bubble that, thanks to its long aging, becomes an emotional caress on the palate. Powerful, elegant, and complex aroma mixing memories of nuts, toasted, balsamic, and subtle smoked flavors. In the mouth, it is wide and very tasty, with light hints of baked fruit, structured and very creamy. Its memory is persistent and pleasant, prolonged like the time its bottle guards.
Elaboration:
Llopart produces all its sparkling wines with the traditional champennoise method, seeking excellence in all its products from the highest quality of the raw material, the grape. The Les Flandes vineyard places us in a haven formed by an amphitheater of vineyards, elevated on walls of limestone rock over 12 meters high, from the Miocene era (16 million years) and over 60 years old. In this place, unique, privileged, and perfect characteristics are present for the production of grapes with the highest expression of singularity. Les Flandes is located 380 meters above sea level, surrounded by a vast lung of Mediterranean pine and oak forest with great biodiversity, where countless aromatic plants predominate. This is why we talk about Llopart's mountain vineyards. "Coupage" with reserve wines aged in oak barrels. Champenoise liquor made according to a genuine oenological formula from the late 19th century. Limited production of 5,300 bottles per year
Pairing: At Made in Spain Gourmet, we recommend it with Sushi, Iberian cold cuts, and light appetizers.

Terroir:
Les Flandes is a space formed by a large amphitheater of vineyards, elevated on a large vertical wall of limestone rock, over 12 meters high. Due to rainwater seepage, spectacular landslides have occurred in the rocky wall, allowing access and examination, in an absolutely exceptional way, to the subsoil of the vineyards located on its surface. The soil is moderately deep, basic pH, and highly evolved. It has a medium to fine texture and a good mineral balance, with the accumulation of carbonates in the middle layers. The level of organic matter is low. Up to 65cm deep, there are numerous cavities and galleries due to the high activity of native fauna. The slope of the terraced terrain prevents the accumulation of rainwater, forcing the vine to develop vertical roots, seeking moisture and taking advantage of the cracks it finds in the limestone rock. This fact allows the vines to maintain stable production and quality, even in years of extreme drought.
Microclimate:
The vineyards extend in a north orientation, shady, and receive filtered sunlight. The altitude compared to the surrounding lands and the easy entry of cooler air from the North lead, during the hottest times, to a high nocturnal thermal contrast, a factor that promotes slow grape ripening. These special conditions give us an optimal aromatic expression, complete phenolic development, and the achievement of good sugar levels, while maintaining the high acidity essential for the long bottle aging that the wines will undergo.
Old Vines:
Like the rest of the Estate, all the vines are surrounded by wild areas and Mediterranean forest. The existing biodiversity provides natural protection to the vines against plant diseases, allowing us to cultivate naturally, with healthy and resistant plants. Cultivation is carried out following the strictest organic and ecological criteria, just like in the other 95 hectares of vineyards in the Can Llopart Estate in Subirats. The vines of Les Flandes were planted in the 1940s and 1960s. They have an approximate production of around 4000 kg/ha. (Less than 1.5 kg per vine)
