White Wine El Gordo del Circo
TheWhite Wine El Gordo del Circobelongs to the Casa Rojo winery and is included in the D.O. Rueda. It is a wine made from 100% Verdejo grapes. The Verdejo grape has its maximum expression in Castilla León, but only in Olmedo, Valladolid, are the old vines and the favorable soil that provide us with this grape and these native yeasts so important in the elaboration on lees of this magnificent white wine. The harvest takes place during the first week of September and in the early hours of the day so that the grapes enter the winery with the lowest possible temperature (around 10º C). Once the grapes have been received, maceration is carried out for 2-3 days and then the grapes are pressed. Only the must from the first pressing is used for the elaboration of the wine. Fermentation takes place in stainless steel tanks at a controlled temperature of 14ºC. Subsequent racking of the gross lees to leave only the fine lees and aging for four months, with weekly batonnages. The final blend undergoes light oak aging.
The wine has an alcohol content of 13.5%. It also has a total acidity of 5.5 g/L, a pH of 3.2 and 3 g/L of residual sugar.
