For the production of "Eterno" oil, we select the plots where the Arbequina variety acquires the highest concentration of aromas and polyphenols. In some of these plots, along with the Arbequina, there are some olive trees of a very old variety of the area, which is not very productive but gives greater potential to the "Eternal" oil

The oil is obtained by applying careful systems of mechanical separation at low temperature.

The olives are harvested by hand and immediately taken to the mill to ensure a perfect condition of the raw material at the time of oil production. The olive harvesting period runs from mid-October to the end of November.
