Goatcheese Musgo de Capra (moldy rind), winner of the silver medal at the 2018/19 World Cheese Awards, is a cheese with mixed coagulation that is artisanally produced in El Barraco (Ávila)


It is a goat cheese matured without pressing, with a naturally moldy rind that has a firm and semi-soft texture, with little elasticity, but very buttery on the palate.

Its flavor is fruity, elegant, and persistent, reminiscent of soft yogurt and sweet cereal notes, with a hint of nuts like hazelnuts.

Musgo de Capra has a smell dominated by damp notes, earthy tones, and forest mushrooms.

The goat cheese Musgo de Capra also won the silver medal at the 14th edition of GourmetQuesos, a championship of the best cheeses in Spain, in the category of young raw milk goat cheese.

The dairy:

At the foot of the Sierra de Gredos, in the heart of the Valle de Iruelas, is the dairy Elvira García, a small dairy that produces cheeses and dairy products from milk from happy goats.

They produce up to 20 different types of cheese. The happiness of their herd of 650 Malagueña breed goats translates into quality fresh milk and internationally and nationally awarded cheeses.

They opened their doors to the public in May 2013. Farmers since always and with awards for the quality of their milk granted by the Malagueña Goat Association at a national level, brothers Francisco and Jesús Alía decided to take the step of closing the cycle and started a journey of training and consulting to produce something in line with the quality of their milk.

All within the natural environment of the Sierra de Gredos that can be seen today from the artisanal dairy that takes the name of their mother: Elvira García.
