The Iberian acorn-fed shoulder (75% I.B.) always has an external layer of fat (yellow fat) thanks to which the shoulder can withstand all the necessary months for proper curing.
The total yield of the shoulder can vary between 28% and 33%.
This means that not all pieces are the same and there can be variations of up to 400 grams of meat up or down in a 5kg shoulder, and the norm is for about 1.4kg of meat to remain in a 4.5-5 kg shoulder once we have removed the bone and external fat.
Usually, the larger the shoulder, the higher % of meat it will have.
However, if you believe that the performance of your shoulder is clearly lower than these percentages, do not hesitate to contact us.
