This pork loin is produced following a 100% traditional drying process, with centuries of history, and it can be appreciated from the cut, with a fine marbling of fat, to the bite, with a melty and intense flavor.

From Iberian pigs raised freely in the Sierra de Aracena and Picos de Aroche, areas declared "Biosphere Reserve" by UNESCO, exclusively fed on acorns during the montanera season. During the last four months of their lives, these animals can eat up to 10kg of acorns daily.
