Organoleptic characteristics: Characteristic color from pink to purple-red and a marbled appearance when sliced. SMELL AND TASTE: delicately flavored meat, not very salty or sweet. Pleasant and characteristic aroma influenced by the area's special climate of very cold winters and very hot summers. TEXTURE: not very fibrous. FAT: shiny, white-pinkish-yellowish color, aromatic and pleasant taste, consistency varies depending on the percentage of acorn in the diet.

Expiration date: It does not have an expiration date, but it is recommended to consume it within 6 months from the moment of purchase.
Storage conditions: Dry and cool place (between 10º and 20º) and preferably hanging. Once sliced, it should be consumed immediately or wrapped in wax paper or plastic wrap to avoid contact with air. However, it is advisable to only cut what will be consumed. It has an approximate consumption period of 3 months after slicing, but it is recommended to consume it within 30 days.
