Olavidia is a soft lactic coagulation cheese, made with milk from their own Malagueña goat herd, to which a slow pasteurization treatment is applied.
The first thing we find in Olavidia is its moldy rind with an intense aroma. Inside, a creamy paste with yogurt aromas is discovered, with a fresh, citrusy, and delicate taste, with a slight spicy bitterness. It also contains a heart of ashes from olive bones, which provides a unique texture and a characteristic flavor note.
This cheese has been awarded as Best Cheese in the World at the World Cheese Awards 2021.
It is recommended to consume at room temperature.
