PROPERTIES:

• Teff is a digestive, antioxidant cereal with a higher nutritional content than most common cereals. It has a low glycemic index and a very high fiber content. Additionally, it provides a great source of proteins.

PREPARATION:

• It is a starchy cereal with thickening qualities, similar to amaranth. It can be used to make vegetable creams, breakfast porridge, stews, or to thicken sauces or stews.
