Elaboration and Aging

Organistrum is a white wine made from the Albariño grape variety. The grapes come from vineyards in southwest-facing plots.

It undergoes fermentation in French Allier oak barrels. During the first 45 days, batonnage is applied, and then it remains in steel tanks for 8 months, which allows the wine to achieve good integration.
