El Pajonales, produced by Quesos Bolaños, is a cured cheese with toasted nuances, nutty flavors, and toasted caramel, due to its edible rind coated with gofio (a flour made from roasted cereals, such as corn or wheat).
It has a firm and compact texture with small tyrosines of casein -popularly known as cheese "crystals"- which are a symbol of slow maturation. It has a dense mouthfeel and a persistent aftertaste.
It is recommended to consume at room temperature.
