Harvesting and Winemaking
The Bardos Roble Red Wine is made from vineyards of low production but which are selected in the area of Páramo de Corcos and its surroundings, in the towns of Moradillo de Roa, Fuentemolinos, Castrillo de la Vega. The soils of these vineyards are sandy loam with boulders on the surface and layers of clay at depth.
These plots are harvested by hand between September 30 and October 15. The bunches are picked and transported to the winery in small trailers. Once in the winery, they begin the fermentation and maceration process in 15,000 kg vats at a temperature of 28ºC for a week, with minimal intervention and pumping over. It then undergoes malolactic fermentation in stainless steel tanks.
