Elaboration:
Harvest: Harvest from early September to early October, when the grapes are at optimal ripeness. Grapes handpicked in 12 kg boxes the first week of October at their optimal ripeness. Careful selection both in the field and in the winery. Alcoholic fermentation in small stainless steel tanks, periodic submersion with cap and moderate maceration. Gentle pressing with separation of the flor wine. Malolactic fermentation. Barrel fermentation and aging in French oak.
