At Made in Spain Gourmet, we recommend it with all kinds of meats, such as duck or premium beef, like a good beef steak or duck a l'orange, with the best Iberian products, acorn-fed ham. Also with smoked foods like mojama or salmon, and of course with excellent aged cheeses, either sheep or goat.
Production:
The harvest is manual, and the grapes are collected in small boxes. In the winery, they are refrigerated for 24 hours at a controlled temperature of 10ºC. The final control of the grapes follows, passing through the selection table and destemming. Maceration of the grapes in open vats for two weeks with daily punching down (pigeage) to favor extraction until fermentation is completed, which takes place at a controlled temperature of 25ºC. It then undergoes eighteen months of aging in new French oak barrels and one year of bottle aging in the winery before being marketed. A wine for aging, optimal for seven years.
Can Bas, Premium Estate Wines
At Can Bas, the wines they produce are honest and genuine. In reality, they are the true witnesses of what has happened in their house throughout the four seasons.
At Can Bas, they are not interested in repeating a wine year after year, nor intervening to achieve an exact copy. Each bottle that leaves their cellar reflects the typicality of the domain as well as the climatic and environmental conditions of the harvest in the Penedés region.
At Can Bas, they work every day to obtain wines that, above all, are the expression of the clusters grown in their vineyards and of the spirit that the owners have infused in them.
At Can Bas, they consider that viticulture and winemaking are not exact sciences. They are more of a practice sustained by intuition, experience, sacrifice, perseverance, stubbornness, good judgment, and a curiosity-driven desire to innovate. And all of this, driven by the work that the hands of their workers dedicate to both the vineyard and the winery.
At Can Bas, they put all their efforts into adapting the vineyard work schedule to the needs of each plot, each variety, or each individual vine, following a scrupulous code of good practices. And when it comes time to make the wine, they are even more meticulous. Therefore, the result is exceptional wines.
Can Bas is a place where the vine has been cultivated for more than two thousand years; a nucleus inhabited since ancient times; a manor house built on an old farmhouse; a unit of agricultural production dedicated continuously to viticulture.
Can Bas is a winery in which, today, they only produce wines from the vineyards of their estate.
Can Bas is a property, a land, a compendium of history, a nexus of culture, the sum of illusions, efforts, knowledge, experience, and work. It is a reference in the geographical framework of Penedès
