Technical data:
Your pigs spend the first stage of their life on your farm, feeding on natural cereals made in your facilities until they reach a weight of between 40 and 50kg, when they access the meadows.
There, they enjoy an exquisite diet composed of this selection of cereals in addition to grasses, tubers, roots, and acorns, reaching 90/100kg in early October (when the montanera begins), at which point the acorns fall and they feed exclusively on them until they reach an approximate weight of 180kg in their adult stage. This is essential to maintain the Iberian breed and be able to call it acorn-fed Iberian.
When cut, it presents a marbled appearance with veins of infiltrated fat, with soft golden tones and a red color that invites you to taste it.
Tasting notes

Its flavor is a combination of the presence of paprika, with a mild touch of garlic, combined with spicy nuances and smoke, providing a long and pleasant aftertaste.

What is Protected Designation of Origin?
Protected Designation of Origin or P.D.O., is a regulated quality seal that guarantees that a product has been made following a specific procedure in a specific region. This ensures exclusive and homogeneous quality in all products that share the same Designation of Origin. As for Iberian palettes and hams, which come from animals that comply with the regulations regarding Iberian pigs, there are only 4 in the world:
- P.D.O. Guijuelo: located in Salamanca.
- P.D.O. Los Pedroches: from the province of Córdoba.
- P.D.O. Jabugo: from the Sierra de Aracena and Picos de Aroche, in Huelva.
- P.D.O. Dehesa de Extremadura: where the million hectares of pastureland we have in Extremadura are an ecological paradise for our pigs.
