WINEMAKING: Remirez de Ganuza Gran Reservais the result of an exhaustive manual harvest and subsequent selection of the best grapes in the winery. Only the "shoulders"of the grapes, the most sun-exposed part of the bunches (and therefore the ripest), are used to make this wine. The vineyards are located in the village of Samaniego and are over 60 years old
The raw material is kept for 24 hours in cold storage at temperatures between 4ºC and 6ºC prior to selection. Alcoholic fermentation takes place in small stainless steel containers and French oak vats
Malolactic fermentation takes place in new barrels before the wine is left to rest for 40 months in new French oak barrels.

The winery is located in the centre ofSamaniego,Álava. It is made up of several old buildings that occupy a block. These buildings are dedicated to the different winemaking processes
Since its beginnings, the winery has been incorporating themost innovative techniques and elements for winemaking. Elements such as the selection table and the cold chambers, which are common nowadays, but were not so at the time when they were first used.

The first selection of the grapes is made during theharvest, which is carried outmanually in 12-kilo boxes. Once the grapes arrive at the winery, they are refrigerated at a temperature between 4ºC and 6ºC.
