Thus, the three cures are made withraw milkfrom the herd of the own farm and natural rind: the fact that the milk is raw allows to preserve the natural ferments, which means that the cheese can developown nuances, impossible to achieve with other types of standard ferments. To obtain this quality milk, the cattle are housed in unbeatable conditions and fed with the best forage and hay, produced on the same farm and to which aromatic plants from the Dehesa itself are added, which confers to the cheeses a unique and special touch.
