The "xeito" is a drift gillnet fishing gear, with a long tradition in the town of Rianxo (Ría de Arousa). It is respectful and sustainable, as it is selective, non-intensive and without discards. It is packaged in the traditional way, piece by piece, by expert hands. The fish goes from the sea to the can in about 4 hours, in order to preserve all its qualities with maximum freshness. The crews are formed by sailors from the area, with a lifetime linked to the sea. The catches are auctioned at the Rianxo fish market and have all the guarantees of the "PescadeRías" certification.

The Bou de Vara sardine is caught in July, when its culinary characteristics are at their best. The sailors go out "á lusada", returning to land with the first light of day, when the fish is at its best moment of preparation. This is removed from the nets one by one, maintaining the integrity of the scale and meat, without crowding so that it does not get flattened, and with natural cold avoiding direct contact with ice.
