Made with 100% sheep's milk from the Manchega breed with a minimum maturation of 2 months and a maximum of 4 months. Its rind is hard and pale yellow to greenish black in color, with a firm compact paste that varies in color from white to yellowish ivory. It has a slightly acidic flavor. Storage
The ideal temperature for cheese storage would be 8 - 10 °C. If we want to stop the evolution of the cheese and the molds of the natural rind, the temperature should be 4ºC. The preferred consumption is a minimum of 8 months, although the expiration is set for 12 months.

Protected Designation of Origin Manchego
In Regulation (EC) 1151/2012 of the European Parliament and of the Council, on the quality regimes of agricultural and food products, it is defined as: "A name that identifies a product:
Originating from a specific place, a region or, exceptionally, a country,
Whose quality or characteristics are due, fundamentally or exclusively, to a particular geographical environment, with the natural and human factors inherent to it, and
Whose production stages take place entirely in the defined geographical area.
The Manchega sheep is grazed all year round, taking advantage of the natural resources of the La Mancha area, although its diet is supported with concentrates and other by-products in times of higher nutritional demands (gestation, lactation, etc.). They are grouped in flocks ranging from 100 to 600 heads, depending on the size of the farm, although flocks of up to 2,000 animals can be found.
There are two varieties of Manchega sheep, according to their coat: one white, with depigmented mucous membranes - which is the most numerous - and another black, with light spots on the head and distal parts of its anatomy. However, the variety does not establish differences in the quality of the milk they produce.
