Breeding and feeding of the animal are fully certified by independent certification bodies.

SMELL AND TASTE: meat with a delicate flavor, slightly salty or sweet. Pleasant and characteristic aroma of the region influenced by its special climate with very cold winters and very hot summers. TEXTURE: slightly fibrous. FAT: shiny, white-pinkish-yellowish coloration, aromatic and pleasant flavor, consistency varies according to the percentage of acorn feeding.
