Additional information:
Caldes de Montbuí, in Vallès Oriental, 20 km from Barcelona, is a beautiful Roman town where thermalism and Catalan gastronomy are practiced and where a centuries-old tradition is preserved.
It's like going back in time in a time machine, manual processes, wood, old facilities... and people, no automation of the process.
Production starts with a pasta maker (over 100 years old) that mixes durum wheat semolina with thermal water from Caldes de Montbuí, the only raw materials used. This type of production is what guarantees the success of their pastas.
After drying in wooden cabinets for 48 hours, they are finally packaged. Noodles and spaghetti are still made by hand.
Limited production guarantees maximum quality, something that industrial production cannot achieve.
