The Salerac is produced and matured between 3 and 6 months in a cellar in the Cantal, in Thiézac in the Cantal. This optimal maturing period gives Salerac its letters of nobility.
The Salerac is made from a variety of cheeses
Under a golden, flowery rind, its well-bound, firm, supple and homogeneous yellow paste gives off a fruity smell with mountain aromas. A unique and authentic flavour in the image of our characterful terroir. The number on the rind is the date of production, which indicates the day of production and thus makes it possible to know the exact maturing period of each cheese.
Both ideal for preserving your Salerac, our tarlatan pouch made in France is also a practical and original gift.
On the conservation side, it will allow you to protect your Salerac while letting it breathe and will allow you to continue refining it if you wish.
