The Musgo Lavado goat cheese, winner of the silver Medal at the 2021 World Cheese Awards, is a cheese with mixed coagulation made in El Barraco (Ávila) and is washed daily with distilled water and salt.
Musgo Lavado has a strong smell, in the mouth it has a firm and semi-soft texture.
As for its flavor, it is fruity, elegant and persistent. Musgo Lavado provides us with memories of soft yogurt and sweet cereal notes.
The natural rind of Musgo Lavado is washed and edible. Washed rind cheeses are those cheeses that during their aging are mainly rubbed with water and salt providing the cheese with an orange and "sticky" rind. For example, large French cheeses like Epoisses, Langres, Mont-d’Or, Munster, Reblochon, etc. are also washed.
The cheese factory:
At the foot of the Sierra de Gredos, in the heart of the Valle de Iruelas, is the Elvira García cheese factory, a small dairy that produces cheeses and dairy products from milk from happy goats.
They produce up to 20 different types of cheese. The happiness of their herd of 650 Malagueña goats translates into quality fresh milk and internationally and nationally award-winning cheeses.
They opened their doors to the public in May 2013. Farmers since always and with awards for the quality of their milk granted by the Malagueña Goat Association at a national level, brothers Francisco and Jesús Alía decided to take the step of closing the cycle and began a journey of training and advice to make something in line with the quality of their milk.
All within the natural environment of the Sierra de Gredos that can be seen from the artisanal cheese factory that takes the name of their mother: Elvira García.
The most awarded cheese from the cheese factory is Luna Nueva, also available in our store along with Musgo de Capra.
