• Selection of the best raw material: White tuna (Thunnus alalunga) caught during the summer coastal fishing season with hooks and selected in the Santoña fish market for its freshness and size.
• Fresh processing: The tuna is cut up and lightly cooked as soon as it arrives from the fish market without being frozen. This makes it juicier and better tasting.
• Artisanal packaging: The tuna belly is shredded into thin slices and packed by hand in olive oil.
