This traditional Spanish salad is made with roasted red peppers, aubergines and onions grown in organic gardens in Navarre.
The vegetables are peeled and chopped by hand and roasted separately so that each vegetable has its optimum juiciness.
The flavour of this mixture is extraordinary, combining perfectly with De la Cueva anchovies or white tuna.
