The oloroso wine undergoes a traditional acidification process and is then aged in oak casks using the solera system for a minimum period of 20 years.
The result is a mahogany-colored vinegar with amber tones, acquired during its aging in wood, clean and penetrating to the nose, where some characteristic touches of aging in American oak stand out. It is a vinegar with a dry, intense and balanced flavor reminiscent of Oloroso wine, with an exquisite and smooth aftertaste that gives it an exclusive character and personality.
