The 100% Iberian Acorn Shoulder comes from the southern mountains of Andalusia where the drying process takes place. With a minimum of 24 months of curing, it is a shoulder with very well-infiltrated fat, with a perfect amount of salt, incredible flavor, and a marbled texture.
