The aged Sudao goat cheese, Gold Medal at the World Cheese Awards 2017/18, is an aged goat cheese made in Extremadura in a traditional way.
The Extremaduran goat cheese Sudao also won the first prize at the National Cheese Fair of Trujillo (2022) in the Soft goat category and the Silver Medal at the Cincho Awards in 2016.
Its rind is semi-hard, defined, and differentiated from the paste. It has presence of molds (penicillium candidum).
Its color is ochre and its salty flavor may present moderate acidity. Lactic flavor.
Intense flavor and tender, buttery texture.
This aged Sudao goat cheese is made by the Extremaduran cheese dairy Doña Francisca, located in El Casar de Cáceres and multiple times awarded at the World Cheese Awards (The Torta del Casar Virgen del Prado they produce became the third best cheese in the world at the World Cheese Awards 2019) In addition to these incredible awards, all the ones achieved by this dairy in recent years both internationally and in various national competitions.
This dairy produces its Extremaduran cheeses in a land rich in natural spaces and ecological diversity that provides top-quality raw materials.
