Stilton, the king of English cheeses; a blue cheese made with pasteurized cow's milk with a maturation of between 3 and 4 months.
It has an intense flavor with notes of nuts and mild spicy notes. A deep and complex artisan product with aromas of toasted grain, moisture, and finishes of melted butter. Its texture is tender, creamy, juicy.
Its natural rind has shades of orange-brown, and its interior hides a straw-yellow paste with a uniform bluish-green marbling caused by the proliferation of the penicillium roqueforti fungus.
The peculiarity of Blue Stilton PDO is that it can only be produced in 3 counties in England: Nottinghamshire, Derbyshire, and Leicestershire. This particular one is produced by the dairy Cropwell Bishop (Nottinghamshire) with milk from 9 small family farms in the area.
It is ideal as an appetizer with bread, breadsticks, or crackers, accompanied by pickles and our Jerez Lauresa wine as a pairing.
