The D.O.P Cabrales cheese, made by the Cares cheese factory, won third place in the Best "blue" cheese category in Spain at the last Gourmet Salon 2023. It is a cheese made artisanally with raw cow, sheep, and goat milk in different proportions, which is made in the Principality of Asturias, specifically in the Council of Cabrales and the villages of Caravés, Oceño, and Rozagás, in Peñamellera Alta. This Asturian cheese comes exclusively from herds registered in the Protected Designation of Origin of Cabrales. The D.O. Cabrales cheese is aged for more than four months in natural caves in the council of Cabrales (Picos de Europa National Park). These caves have the optimal conditions of freshness and humidity for the development of penicillium mold inside, giving the Asturian cheese that famous color. As a good Asturian blue cheese, our select Cabrales cheese (presented in a small format) has a strong flavor that leaves an intense aftertaste on the palate, slightly spicy. Cabrales cheese has a very strong aroma, with a semi-hard, buttery paste, ivory-white background, and characteristic green-blue tones of these cheeses, without eyes. Its fine rind is creamy, brown.
