The contra de culata is a piece obtained from the rear leg, located between the soft blade and the rear shank. It is an ideal piece to make in sauces, it is very juicy and has a gelatinous texture that gives it a very special flavour. Another option is to grill it, stew it in cubes or roast it whole. This is a fresh product, cut by hand. It does not contain allergens or any type of seasoning, only veal.
Contra de culata has a very typical recipe in which it is presented iscooked with vegetables, as stews were made in the old days.
In the pot, place two chopped onions, some carrots, some pepper berries and cloves, and a bay leaf. Add ½ glass of red wine and a cup of beef stock to the browned pieces. Cook it all for 20 minutes. It is important that you stock up on bread, the sauce is delicious!
We recommend keeping it between 1º and 5ºC
Preferred consumption: within 10 days
Tip: ideally, take it out of the fridge 20 minutes before to temper the meat. This way, no matter how little you cook it, the central part of the piece will never be cold.
If you are not going to eat it, you can freeze it without any problem.
