The Morcón is a sausage meat product, similar to chorizo, but made from a higher quality meat and closer to the loin.
It is dried using part of the large intestine of the pig, resulting in wider and shorter pieces than in the chorizo or loin.
It is also seasoned with sweet paprika and salt, giving it the characteristic colour in which large lean pieces of meat are intermingled with other smaller and white pieces that provide all the flavour in the right measure of sweetness. It is a product of extraordinary quality that maintains the traditional flavour of the sierra
