PROPERTIES: Organic corn semolina (polenta) is obtained by grinding dried corn, making it easier to digest. Polenta is a very interesting food because it contains the main groups of nutrients: carbohydrates, proteins, fats, vitamins, minerals, and fiber. It is particularly rich in complex carbohydrates that are slowly assimilated, therefore providing long-lasting energy and satiety. It has a relative content of essential fatty acids and both soluble and insoluble fiber. As for protein, like other cereals, it is deficient in the essential amino acid lysine. This deficiency is compensated for by consuming legumes or nuts.
PREPARATION: It is quick to prepare and very nutritious. The ratio is always four parts liquid to one part dry polenta. Put three cups of water in a tall pot and reserve one at room temperature. Bring the water to a boil and add salt. Interrupt the boiling with the fourth cup of water and gradually add the polenta, raining it down while constantly whisking to prevent lumps from forming. Stir for 5 minutes over low heat until the polenta is cooked and the consistency is thick. Remove from heat and mix the mixture with a tablespoon of oil.
