Tasting notes
Made with pasteurized goat milk, with specifically chosen cultures to enhance scents and aromas of cake and nuts.
With moderate intensity of smell, highlighting dairy notes of cream and butter, and toasted notes of walnut and cake.
Firm, soluble, and slightly moist texture, in the mouth, the notes of cake and walnut are enhanced, with a slight hint of goat milk.
It is a sweet, slightly acidic, and salty cheese, without bitterness. The aroma of walnut lingers in the mouth.
Pairing
Pairs well with white wine, especially Manzanilla, creating a synergy between the cheese and the wine to enhance the creaminess of the cheese and intensify the aromas of nuts.
A good pairing can also be achieved with Palo Cortado wine and sweet wine.
