The CALIZO Asturian mountain cheese is a tasty and powerful cheese with a great balance between strength and complexity. Sold in approximately 230g wedges, it is made at Quesería La Huertona, which is located in Benia de Onís with utmost respect for artisanal methods and our extraordinary environment. Following an ancestral recipe used by shepherds, it only uses natural ingredients. From the best pastures, the best breeds, and the know-how passed down from generation to generation, combined with the technology and innovation of our cheese factory, these Asturian mountain cheeses are made in the unmistakable surroundings of the Picos de Europa. CHARACTERISTICS · TYPE OF MILK: Raw cow's milk · INTENSITY: Medium-high · TYPE OF PASTE: Self-pressed, matured · TYPE OF RIND: Naturally moldy · ONLINE SALES FORMAT: Approx. 230g wedge PRODUCTION Made using a careful ancestral recipe used by shepherds, using only natural ingredients, without any additives: raw cow's milk and animal rennet. It is smoked with oak wood, and its maturation, depending on the size, ranges between 6 and 8 months in a natural cave, under high humidity and low temperature conditions. VISUAL: Moldy rind with predominance of whitish, brown, and reddish tones. The texture is firm and buttery at the same time, with a white-yellowish paste. As it is not pressed, during the ripening process, there is a slight infiltration of penicillium roqueforti, resulting in blue veins near the rind. AROMATIC: We can appreciate a high complexity with predominance of dairy and nutty aromas, as well as subtle hints of mold and smoke. TASTING: Upon tasting, we will notice a slightly dry texture that becomes more buttery as it progresses, without dryness. The flavors of grass, warm notes, smoky aftertaste, and a slightly spicy finish stand out. An intense and very tasty cheese, perfect to pair with ice cider or barrel-aged white wines.
