Made with raw sheep's milk, its minimum curing time is two months. With a light ivory-colored paste, it can have small eyes distributed throughout its surface and its texture is buttery, somewhat floury. Its characteristic flavor, acidic, strong, and tasty, becomes more intense as it matures.
It differs from other cured sheep cheeses due to the feed the sheep receive, as the milk comes from three small farms in Cantabria, where the sheep graze for long periods throughout the year.
