TRADITIONAL CULTIVATED OLIVE GROVES. Our recovered olive groves, scattered in small plots in the Sierra de Altomira, are of a unique and native variety of the region, the Verdeja or Castellana variety native to the Alcarria region.

EXCELLENCE IN PRODUCTION. Our small, but modern mill, allows us to control the extraction process at all times, always applying parameters above the defined standards for the extraction of Extra Virgin Olive Oil.

A FRESH JUICE. The olives are always picked on the fly and milled on the same day of harvest, the fruit arrives at the mill intact, allowing for acidity levels of Extra Virgin Olive Oil well below the established standards.
