"Queixo do País" crafted with raw milk from blonde Galician cows and aged for 60 days. It is a super creamy cheese, with a very soft texture, that has notes of milk and butter and light acidic undertones in the mouth. It is a mild cheese in the mouth, but with the intense aromas and flavors characteristic of raw milk.
This cheese represents the livestock reality of rural Galicia. A reality led by women who milk their cows twice a day and, with the surplus milk, make artisan cheeses (true artisans) that they will sell in their small market space with very few days of maturation.
Country cheeses are much more than creamy cheeses made from raw milk, they are the result of an eternal tradition and a product with which we show our commitment to the countryside and female farmers. Due to its slight acidic touch, it pairs wonderfully with sweet fruits or quince. Edible rind.
Pair it with a white wine like our Godello Pascuala.
It is recommended to consume at room temperature.
