Salting: we salt our pieces by controlling the parameters to obtain hams and shoulders with an optimum salting point.
Drying: we carry out post-salting and drying in our facilities, controlling the humidity and temperature of the pieces.
Maturation: we let them age in our natural cellar, which gives them a traditional aroma and flavour.
