The whole cheese Peñamellera Cueva Llonín is an Asturian cheese made with pasteurized cow's milk that is artisanally produced in eastern Asturias, in Alles, Peñamellera Alta. This Asturian cheese is soft and creamy. Its appearance and texture resemble great French cheeses like Brie or Camembert. Covered in mold, it has a pure aroma and a subtle touch of mushrooms, creamy and complex, with notes of fresh grass. The rind of the cow's milk cheese Peñamellera Cueva El Llonín is moldy, white in color with a velvety texture, due to the natural aging of the cheese, by the mold that covers it. The Llonín cave, from which this cheese takes its name, is a UNESCO World Heritage site and is located in the Peñamellera Alta region. It was discovered in 1957 by local cheese producers looking for a place to mature their cheeses. In 2000, starting from the traditional cheese of the area, the current cheese was created, but aged with molds, which gives it sensory characteristics (both in texture and flavor) similar to the popular brie and camembert. It is presented in a whole cheese format, weighing approximately 300 grams, and comes wrapped in thick paper. Store it in the refrigerator between 3 and 6 degrees Celsius and to enjoy its best flavor, take it out of the packaging and the refrigerator a while before consuming it. It is recommended to eat it with crunchy bread, fruits, and nuts accompanied by a Brut cider or a natural Asturian cider.
