100% Sauvignon Blanc

After 2 hot seasons marked by scarce rainfall and concerning water deficits, this year 2020-2021 finally offered us a cool and humid season. Summer started with very good temperatures, allowing the grapes to grow and develop under optimal conditions. However, the weather presented us with new challenges, gifting us with rain in late January 2021. It was the most intense rainfall recorded in the last 70 years (80 mm), making this summer of 2021 the coolest of the decade. The harvest dates were delayed by 15 to 20 days compared to last year and approached normalcy for colder harvests.
