Prepared as tradition dictates with the hind legs of pigs of a breed native to the peninsula, which our ancestors developed with the aim of obtaining an animal that had an infiltration of intramuscular fat that gives it an exquisite juiciness. Its diet is based exclusively on acorns, grass and roots

Everything starts with the best material to achieve an excellent product, the 100% JARALLANA Acorn-fed Iberian Ham, but a slow curing process that begins with the entry of the fresh piece in salt, approximately one day per kilo at a controlled temperature and humidity, is decisive. Afterwards, our 100% JARALLANA acorn-fed hams are hung in controlled drying sheds to allow the meat to settle, simulating winter conditions of cold and humidity. After about 5-6 months they go to natural drying sheds where the wind currents and temperatures mold the ham and that is where the magic happens, such as the enzymatic hydrolysis of the proteins due to the long process, where amino acids are generated (glutamic acid, alanine and lysine) that give it a very pleasant and intense flavor, or the lipolysis of the fat, which occurs in the cold phase that we mentioned above and in the cellar phase that generates in the ham those aromas so pleasant to the sense of smell. Once the ham has lost more than 30% of its weight due to dehydration, it moves on to the last stage, the cellar, where temperatures are around 15ºC and the piece settles and remains in a state of almost latency until it is consumed
