We receive fresh octopus from the best Galician fish markets. Once in our facilities we proceed to its cleaning for its subsequent freezing. A necessary process to break the fibers of the meat and thus achieve the tenderness adecuada.Transcurrido the time needed to achieve the desired tenderness, we proceed to cook the pieces with water, salt and onion for the appropriate time according to size. Once cooked, it is drained and left to cool for a few hours, then cut and presented in orderly fashion, incorporating the AJADA Galician sauce, based on olive oil, paprika and garlic to achieve excellent preservation
