Doña Francisca's AGED Sheep Cheese is an Extremaduran cheese aged for 18 months. It is made entirely by hand using raw sheep's milk, rennet, lactic ferments, and salt.
This aged sheep cheese has a yellowish paste, with rounded eyes typical of the aging process distributed throughout the cut.
Its texture is smooth or non-grainy. It has aromas of the lactic family and/or vegetables.
This aged cheese from Extremadura has a slightly acidic, strong, and spicy flavor due to its aging. It has a pleasant and peculiar residual taste that comes from the sheep's milk.
Its rind is defined and different from the paste, with impressions of braided molds on the lateral surface and flower molds on the flat sides.
It comes from Doña Francisca Cheese Factory, located in Casar de Cáceres, which produces exquisite cheeses in a traditional way and has been awarded with various prizes. A land rich in natural spaces and ecological diversity that provides top-quality raw materials.
