Properties
Panela provides vitamins from the B, A, C, D, and E groups. As well as minerals such as zinc, magnesium, phosphorus, iron, calcium, copper, and manganese.
Manufacturing process
It is made artisanally, first the sugar cane juice is cooked until a thick molasses begins to form.
This molasses is poured into molds where it dries, curdles, and solidifies.
To facilitate consumption, the panela is grated and it is through this process that there are always some "lumps".
