Making and ageing
Figuero 4 is made from 100% Tempranillo, with an average age of between 15 and 20 years. The harvest was done manually, in baskets of 12 kilos. Afterwards, a special cold maceration was carried out for 2 to 3 days at 12ºC. Alcoholic fermentation was spontaneous and was carried out at a maximum temperature of 28ºC, with 2 daily pumping-overs and 1 "délestage" at the end of fermentation. After fermentation, a second maceration was carried out for 15 days.
