This process allows us to make the most of the cod, using even the parts that would normally be discarded.

How are they prepared?

Preparing cod crumbs is not complicated, but it does require some time and patience, especially because the cod needs to be desalted well to avoid it being too salty.

Here we explain how to do it step by step:

  1. Desalting the cod. The first step is to desalt it, which is necessary so that the cod does not end up overly salty. To achieve this, you have to place the cod crumbs in a container with cold water and let them hydrate for at least 24 hours. Ideally, you should change the water two or three times during this process because the cod releases salt as it hydrates.
  2. Shredding the cod. Once desalted, the cod is shredded by hand or with a fork. The fish will separate into fine strands that are ideal for preparing different recipes. Make sure to remove any bones that may remain during this process.
  3. Cooking the crumbs. For the preparation of cod crumbs, once the fish has been shredded, you can choose from various cooking methods. The cod can be fried with onion, peppers, tomato, and garlic. The sofrito is an essential part of many recipes that helps to add flavor and depth to the dish. You can also add elements like cumin, parsley, or bay leaf to give it an even more delicious touch.
